Happy Meat-Mas!
It's the most wonderful time of the year! Not Christmas, it's the first weekend of the NCAA Men's Basketball Tournament, which means I fire up the smoker and cook some goodies!
In the past I have cooked duck, oysters, brisket - anything! I kept it fairly simple this year: just some chicken sausages, 4 racks of ribs, pork loin, and some salmon. I may do more in the next few days.
I also smoked some beef bones that I add to my collard greens, which came out perfectly. Some of those on some good bread with the pork and some cheese make an AMAZING sandwich!
